Spot On Buffalo Chicken Chili

Hi Spot On Gamers! Whether you are hosting a game night, watching the big game, or just want a delicious meal for your family, this chili is just the perfect dish! It's a throw it all in the crockpot in the morning and just add some cream cheese at the end easy prep meal. It makes your house smell good all day and makes your family and friends happy all night. Here's the recipe - but don't stress the measurements too much! It will come out delicious if you simply eyeball it and slap dash it on the go. :)

RECIPE:

Ingredients:

1 1/2 lbs. boneless chicken breasts

1 can of Great Northern Beans, drained

1 can sweet corn, drained

1 can fire roasted tomatoes, drained

2 cups of chicken broth

1 package of ranch dressing mix

1/2 cup of Buffalo Sauce of Choice 

1/2 tsp. of any combination of the following spices you have on hand: salt, garlic powder, garlic salt, celery salt, dried cilantro, chili powder, ground cumin, red pepper flakes

8 oz. pkg. of cream cheese softened

*Don't make it difficult - get a regular old sized can of everything. :) You could even get a can of the chicken broth and not have to measure that!

Feel free to use low sodium, organic, or any other special items that make you happy - it will be delicious no matter what. Good news for those who don't do gluten - it's gluten free (make sure to get the ranch dressing packet that's gluten free which is Hidden Valley).

Instructions:

Throw everything into your slow cooker except the cream cheese and cook on low for 8 hours. After that, take two forks and shred the chicken really well so that it will be easy to eat. This won't be difficult - the chicken will be very tender and shred easily. Next, add the softened cream cheese and stir until it is mixed in really well and the chili is nice and creamy.

To Serve:

Top with anything you like, but here are a few suggestions: tortilla chips, green onions, sour cream, blue cheese crumbles, and fresh cilantro.

Serves about 6 

Notes:

This recipe is easy to double if you've got a big crockpot (or you could borrow an extra one) to feed a crowd. It's fun to add some corn bread or muffins to round out the meal and it's always good to have a big bowl of corn chips nearby for those who like to eat their chili like it's a dip. Oh... also put out the hot sauce. It is never hot enough for some people!!
